French onion soup

Sweet onion soup with a slice of bread and cheese, from the oven, served in cups. For 4 to 6 people.


  • 6 brown onions
  • olive oil
  • ¼ teaspoon sugar
  • 2 chopped cloves of garlic
  • 2 liters beef broth (or possibly cubes)
  • 125 ml dry white wine
  • 1 bay leaf
  • ¼ teaspoon dried thyme
  • salt
  • pepper
  • 8 slices of toasted French bread (baguette)
  • 8 slices of cheese

  1. Peel and cut the onions into very thin rings. In a large pan with olive oil slowly fry the onions 30-40 minutes or longer to become caramel brown (not burnt). After about ten minutes of frying, add sugar.
  2. Add garlic and fry. Pour over broth, wine and add the thyme and bay leaf. Cook for 30 minutes to soup develops flavor, if necessary, add salt and pepper. Remove the bay leaf.
  3. Preheat oven to 180 degrees. Prepare the dish suitable for the oven (clay or porcelain) and put soup in them. On top, place a slice or two of bread and cover with a slice of cheese. In the oven turn on the oven grill and cook for 10 minutes or until the cheese begins to form bubbles.
  4. You onion soup is ready. Serve immediately.
