Foil potatoes with prosciutto

Baked potatoes are usually served as a side dish. But with some excellent additions, it can be quickly turned into a separate main dish. Foil potatoes with prosciutto you can serve with a big bowl of seasonal salads.


  • 4 large potatoes
  • 0.5 teaspoon salt
  • sour cream (6 to 8 tablespoons)
  • 1.5 tablespoons of oil
  • 6 slices prosciutto
  • 8 sprigs fresh chives


  1. Preheat the oven to 200 degrees Celsius (392 degrees Fahrenheit). Wash the potatoes well, under running water and dry with kitchen towel. The entire surface repeatedly pierce with a fork. Each potatoes separately wrap with aluminum foil.
  2. Foil-wrapped potatoes put on oven grid and bake in a preheated oven at medium height about 45 minutes. With a narrow thin knife check whether the potatoes are baked enough, if necessary bake them additional 5 to 15 minutes.
  3. While the potatoes are baking, you can prepare other ingredients. Cut the chives into small pieces. In a pan heat the oil and on both sides crispy fry slices of prosciutto. Two toasted slices cut into small pieces.
  4. Remove baked potatoes from the oven and carefully open the top of the foil (make sure that you don’t get burned). With the knife make a incision in the potato and slightly press on the potato, so it opens. The interior of the potato then lightly season with salt and stuff with sour cream, on which you put pieces of prosciutto and chives.


Instead of prosciutto in foil potatoes, you can use bacon or pancetta.

Why are foil potatoes better?

One of the reasons is that potato wrapped in aluminum foil bake faster, which in baking whole potatoes, can be considerably prolonged. The second reason is, that after baking stays warm for a long time, which comes in handy especially in cold autumn picnic with chestnuts. The third is definitely the one to keep potato skin soft and easy to peel. And a fourth – the interior of the foil potatoes after baking is not as dry as in baking without foil, and also is more firm.
