Courgettes are extremely easy to digest food, so they are ideal as a diet food. The energy value of courgettes is small but contain a lot of vitamins and minerals.   • 800 g courgettes (zucchini)
  • 1 medium onion
  • 2 cloves of garlic
  • 2 tablespoons olive oil
  • 800 ml vegetable broth
  • 150 ml cooking cream
  • 2 pinches of salt
  • 2 pinches of ground pepper

Courgettes are extremely easy to digest food, so they are ideal as a diet food.


  1. Wash the courgettes and cut them into smaller pieces. Peel the onions, clean them and cut into quarters. Peel the garlic and cut in half.
  2. In a pan put courgettes, garlic and onions and stirring everything together and fry very quickly. Pour over broth (or plain water) and cook on low heat for about 15 minutes.
  3. When the vegetables softens, mix the soup with blender into smooth liquid. Mix the cream into the soup and season to taste with salt and pepper. Serve your courgette soup immediately, still hot in a deep plate.
